Honey yuzu oolong tea under a whisked matcha cloud.
Stir 1-2 tbsp honey yuzu with 30ml water in the glass. Add ice and 100ml oolong tea. Whip 40ml milk, 40ml whipping cream and 4g matcha into a soft cloud and float it on top. Dust with matcha and garnish with yuzu peel.
Yuzu base: 1-2 tbsp honey yuzu (honey citron tea), 30ml water. Oolong base: 100ml oolong tea (MUJI). Matcha cloud: 40ml milk, 40ml whipping cream, 4g matcha powder.
