Bright orange juice under a silky blueberry cloud.
Froth 30ml water with 15ml blueberry syrup and ½ tsp emulsifier until silky smooth. Fill a glass with 125g ice, pour in 55ml orange juice and top up, then float the blue cloud over the top. Garnish with a small flower.
